A fuss-free, baby-friendly mini cake that looks gorgeous and takes minutes to assemble. No piping bag required! 🍓

Ingredients

  • 1 shop-bought plain vanilla sponge 
  • 100 grams full-fat cream cheese 
  • 2 tablespoons icing sugar, sifted
  • 0.5 teaspoons vanilla extract
  • 1 cups fresh strawberries, raspberries or blueberries (or a mix!)

Steps

Make the frosting: Beat together 100 grams full-fat cream cheese (e.g. Philadelphia)2 tablespoons icing sugar, sifted, and 0.5 teaspoons vanilla extract until smooth and spreadable. Cream cheese frosting is ideal for babies — it’s not too sweet, holds its shape without butter or food colouring, and has a lovely tang that works beautifully with berries.
Frost the cake: Spread the frosting generously over the top and sides of your sponge 1 shop-bought plain vanilla sponge using a spoon or palette knife. It doesn’t need to be perfect — rustic is the smash cake vibe! A thick, cloud-like layer of frosting is exactly what you want.
Decorate with berries: Pile 1 cups fresh strawberries, raspberries or blueberries (or a mix!) on top and around the base. Halve the strawberries for a prettier look and easier baby grabbing. Tuck a few berries into the frosting on the sides too for that ‘berry patch’ effect.
Pop on the topper & serve: Add a cake topper if you have one, place it on a small plate or cake board in front of your baby’s high chair, and let the chaos begin! Have your camera ready before it lands on the tray. 📸

Notes

Make it even easier: Some supermarkets sell small 4-inch sponge cakes in their bakery section — these are the perfect smash cake size straight out of the box.

Allergy note: Always check ingredients for the baby’s known allergies. 

Honey warning: Never add honey to anything for babies under 12 months. For a one-year-old this recipe is fine, but double check with your GP if you have any concerns.

Make ahead: The frosted cake can be assembled the night before and kept covered in the fridge. Add the fresh berries on the day.

Cupcakes — Individual strawberry, raspberry, or blueberry cupcakes topped with berry-coloured frosting and fresh berries are a brilliant alternative to a large cake, especially if you have lots of little guests.
